In addition to contemporary Italian cuisine, the menu features a "Firenze Experience" selection of dishes dedicated to specialties in pure Tuscan style. Examples include panzanella salad, cold cuts and cheeses from Chianti, pappa al pomodoro soup, Florentine tripe, gnocchi made with potatoes from Mugello, rabbit ragout and chili pepper and honey-basted duck.
